Chef de Cuisine, Juan Zuniga
Born and raised in South Gate, California, Juan Zuniga grew up with a passion for the culinary arts, which was inspired by his grandmother’s Mexican cooking – particularly her handmade tortillas. At age 15, after enrolling in a high school home economics course, Zuniga decided to pursue a career as a chef. Upon graduation, Zuniga was determined to perfect his skills and decided to attend the Art Institute in Santa Monica, California where he earned an Associate of Science degree in Culinary Arts and a Bachelors of Science in Culinary Management.
While earning his degrees, Zuniga worked as a lead line cook at the elite Jonathan Club in Santa Monica, California where his passion for cooking continued to blossom. At the Jonathan Club, Zuniga took pride in the elegant presentation of dishes in a formal dining room setting. Dedicated to honing his management experience, Zuniga took a position as the banquet chef for Colette’s Catering in Fullerton, which allowed him to round out his skills while coordinating the menus and staff at a large-scale operation. At Colette’s, Zuniga was able to utilize both his culinary and management skills before becoming the sous chef at Lucy’s 51, a chic restaurant focused on upscale comfort food prepared with locally sourced ingredients, located in Toluca Lake.
With a drive to expand his horizons and experiment with new techniques, Zuniga departed Los Angeles for the bright lights of Las Vegas. In 2008, Zuniga was recruited as a sous chef for BLT Burger at MGM Mirage, where he quickly rose to chef de cuisine. At BLT Burger, Zuniga regularly develops new and interesting menu items, from bold and quirky Super Bowl burgers to appetizer specials, such as the BBQ Brisket Quesadilla, using seasonal ingredients.
In his spare time, Zuniga can be found out in the wilderness camping, fishing and testing new dishes with his catch of the day.
